Herring & Mackerel
This dish is prepared using ‘mealy crushie’ – oats fried with bacon – and uses scallions to accompany fresh mackerel and soused (raw preserved) herrings.

Mackerel and Herrings with Mealie Crushie

Method
- Heat oil in pan/skillet.
- Add bacon and cook until crisp. Remove from the pan.
- Score the mackerel and cook in pan in bacon fat.
- Add the butter and cook the oats (mealie crushie). Add the scallions and cook together.
- Return bacon to the pan.
- Flash fry the herrings to warm through.
- Serve the fish topped with the mealie crushie.
